01 The Sear Flat-Top • Fig. 01

Thirty
Seconds
Of Heat.

A burger lit against pure black, the seared edge of the patty visible.

A loose ball of fresh-ground beef hits a screaming flat-top and gets pressed thin — once, hard, and never again.

What happens next is the entire reason this place exists. Every bit of the patty is touching hot steel, so the whole underside browns at once. Not grilled. Not griddled gently. Seared, edge to lace-thin edge, into a crust you cannot fake and cannot get back if you flip too early.

Press once.
Flip once.
Serve it hot.

02 The Stack Anatomy • Fig. 02

The
Stack.

Built in one order, for one reason: everything melts into the crust instead of sliding off it.

  1. 01 Crown Bun Split, buttered, and toasted face-down in the beef fat left on the griddle. Toasted
  2. 02 The Build Onion, pickle, shredded lettuce, tomato — or none of it. Your call, every time. To order
  3. 03 House Sauce Made in-house. Tangy, a little smoky, laid on thin so it doesn't drown the beef. In-house
  4. 04 American Cheese Laid on while the patty is still on the steel, so it melts down into the crust. Melted on
  5. 05 Smashed Patty Fresh-ground chuck, pressed thin, seared hard. One, two, or three of them. ×1 — ×3
  6. 06 Heel Bun Also toasted. A dry bun is a wasted bun. Toasted

03 Wings Fried To Order • Fig. 03
Buffalo wings glistening with sauce, served with celery and dip.

Wings //
Tossed Hot.

Dropped when you order them, tossed the second they come out of the oil. That's the window where sauce grabs the skin instead of sliding off it.

Bone-in or boneless. Ranch or blue cheese. Say the word and we'll toss them twice, or leave them naked with the sauce on the side.

Nothing
Sits
Waiting.

There's no warming tray in this kitchen. Nothing is cooked ahead of the ticket and nothing sits under a lamp hoping somebody orders it. It costs us a few minutes on every order. It's the only way the crust survives the trip to your table.

01 / Beef

Ground Fresh,
Never Frozen

Chuck, ground for the smash and kept loose. A packed patty can't spread thin, and a patty that can't spread thin can't build a crust.

02 / Fire

Flat-Top
& Fryer

Two heat sources, run hot and scraped clean between tickets. The griddle handles the beef and the buns. The fryer handles the wings and the fries.

03 / Timing

Cooked To
The Ticket

Your order starts the clock. Patties hit steel, wings hit oil, and everything lands together while it's still loud with heat.

Wings To Order Tossed out of the oil
